Avocado Cracker Topping
If you like guacamole, this is something a little different. It's good with crackers like Stoned Wheat Thins.
 
     
 
  • 2 avocados
  • 5 scallions or 1 very small white onion
  • 1 tsp olive oil
  • 2 tbsp lime juice
  • Garlic salt to taste
Halve the avocados, and set the pits aside. Peel and chop the avocados, and put them into a medium bowl. Chop the scallions (or mince the small onion) and add to the bowl. Add the olive oil and lime juice, stirring gently to leave the avocado chunks intact; garlic salt to taste. Serve with crackers. If you need to save the avocado topping, replace the avocado pits in the bowl, cover tightly with plastic wrap, and refrigerate.
